This Blackberry Berry Chia Seed Pudding is a light, creamy, and naturally sweet make‑ahead breakfast or snack. Fresh blackberries and mixed berries blend with chia seeds and almond milk to create a nutrient‑packed pudding rich in fiber, antioxidants, and omega‑3s. Perfect for meal prep, refreshing summer mornings, or a wholesome dessert.

Ingredients
  

  • 2 cups fresh blackberries plus extra for topping
  • 1 cup mixed berries blueberries, raspberries, strawberries
  • 2 cups unsweetened almond milk or any plant‑based milk
  • 6 tablespoons chia seeds
  • 2 –3 tablespoons maple syrup or honey optional, to taste
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Optional toppings: granola coconut flakes, extra berries, mint

Instructions
 

  • Mash the berries:
  • In a bowl, lightly mash the blackberries and mixed berries to release juices. Leave some whole for texture.
  • Mix the base:
  • Add almond milk, chia seeds, maple syrup (or honey), vanilla, and a pinch of salt. Stir well.
  • Stir again:
  • After 10 minutes, stir once more to prevent clumping.
  • Chill:
  • Cover and refrigerate for 4 hours or overnight until thick and pudding‑like.
  • Serve:
  • Spoon into jars or bowls and top with fresh blackberries, granola, coconut, or mint.
