🍓 Strawberry Lemon Blondies Recipe

Ingredients

  • 1/2 cup 1 stick unsalted butter, melted and slightly cooled
  • 1 cup light brown sugar packed
  • 1 large egg
  • 1 tablespoon lemon zest about 1 large lemon
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup diced fresh strawberries patted dry
  • For the Lemon Glaze Optional but Recommended:
  • 1/2 cup powdered sugar
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest
  • 1 tablespoon mashed strawberries for color and flavor – optional

  • Preheat & Prep
  • Preheat your oven to 350°F (175°C).
  • Line an 8x8-inch baking pan with parchment paper or grease lightly.
  • Mix the Wet Ingredients
  • In a large bowl, whisk together the melted butter and brown sugar until smooth.
  • Add the egg, lemon zest, lemon juice, and vanilla extract. Mix until fully combined.
  • Add Dry Ingredients
  • In a separate bowl, whisk the flour, baking powder, and salt.
  • Gradually fold the dry ingredients into the wet mixture until just combined (do not overmix).
  • Add Strawberries
  • Gently fold in the diced strawberries. Make sure they're not too wet, or they may make the blondies soggy.
  • Bake
  • Pour the batter into your prepared pan and smooth the top.
  • Bake for 25–30 minutes, or until the edges are lightly golden and a toothpick inserted in the center comes out mostly clean.
  • Let cool completely in the pan before glazing or slicing.
  • Glaze (Optional)
  • In a small bowl, mix powdered sugar, lemon juice, zest, and mashed strawberries (if using).
  • Drizzle over cooled blondies. Let set before cutting.
