🧁 Instructions
Preheat & Prep
Preheat your oven to 350°F (175°C).
Line an 8x8-inch baking pan with parchment paper or grease lightly.
Mix the Wet Ingredients
In a large bowl, whisk together the melted butter and brown sugar until smooth.
Add the egg, lemon zest, lemon juice, and vanilla extract. Mix until fully combined.
Add Dry Ingredients
In a separate bowl, whisk the flour, baking powder, and salt.
Gradually fold the dry ingredients into the wet mixture until just combined (do not overmix).
Add Strawberries
Gently fold in the diced strawberries. Make sure they're not too wet, or they may make the blondies soggy.
Bake
Pour the batter into your prepared pan and smooth the top.
Bake for 25–30 minutes, or until the edges are lightly golden and a toothpick inserted in the center comes out mostly clean.
Let cool completely in the pan before glazing or slicing.
Glaze (Optional)
In a small bowl, mix powdered sugar, lemon juice, zest, and mashed strawberries (if using).
Drizzle over cooled blondies. Let set before cutting.
