  • 1 –2 teaspoons zero-calorie sweetener such as monk fruit or stevia, 0 calories
  • ½ teaspoon vanilla extract 6 calories
  • â…› teaspoon xanthan gum optional, 0 calories – helps creaminess
  • Optional Mix-ins calories vary:
  • ÂĽ cup fresh strawberries diced (15 calories)
  • 1 tablespoon sugar-free chocolate chips 30 calories

Instructions
 

  • Step 1: Make the base
  • In a mixing bowl, whisk together the Greek yogurt, almond milk, sugar-free pudding mix, sweetener, vanilla extract, and xanthan gum until smooth and well combined.
  • Step 2: Freeze the base
  • Pour the mixture into a Ninja Creami pint container. Cover with the lid and place on a flat surface in the freezer for at least 24 hours.
  • Step 3: Spin into ice cream
  • Remove the frozen pint from the freezer. Place it into the Ninja Creami outer bowl, lock it into the machine, and select the “Lite Ice Cream” setting.
  • Step 4: Adjust texture
  • If the mixture is crumbly after the first spin, simply use the “Re-spin” function for a creamier consistency.
  • Step 5: Add mix-ins (optional)
  • If you’d like fruit, chocolate chips, or nuts, create a small well in the center of the ice cream, add your mix-ins, and use the “Mix-in” function.
  • Step 6: Serve and enjoy
  • Scoop into a bowl, garnish with fresh fruit if desired, and enjoy a healthy frozen treat.
