🥣 Instructions
Step 1: Preheat & Prepare Sweet Potatoes
Preheat oven to 375°F (190°C).
Boil or steam sweet potatoes for about 10–12 minutes or until just fork-tender (not mushy). Drain and set aside.
Step 2: Cook the Base
In a large skillet, heat olive oil over medium heat.
Sauté the diced onion for 3–4 minutes until translucent.
Add garlic, thyme, sage, salt, and pepper. Cook for another 1–2 minutes.
Step 3: Make the Sauce
In a separate saucepan, melt butter over medium heat.
Whisk in flour to form a roux, stirring constantly for 1 minute.
Gradually whisk in the milk until smooth. Cook for 3–5 minutes, stirring often, until thickened.
Add nutmeg, salt, and pepper. Adjust seasoning to taste.
Step 4: Assemble the Bake
In a large mixing bowl, combine cooked turkey, sweet potatoes, sautéed onion mix, peas, corn, and sauce. Mix gently.
Pour mixture into a greased 9x13-inch baking dish.
Optional: Sprinkle shredded cheese evenly over the top.
Step 5: Bake
Bake uncovered in the preheated oven for 30–35 minutes, or until bubbly and golden on top.
Let rest for 5–10 minutes before serving.
