  • Salt and pepper to taste
  • 1/2 cup frozen peas optional
  • 1/2 cup frozen corn optional
  • 1/2 cup shredded cheddar or mozzarella optional for topping

  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour or gluten-free flour
  • 1 1/2 cups milk dairy or plant-based
  • 1/4 teaspoon ground nutmeg optional
  • Salt and pepper to taste

  • Step 1: Preheat & Prepare Sweet Potatoes
  • Preheat oven to 375°F (190°C).
  • Boil or steam sweet potatoes for about 10–12 minutes or until just fork-tender (not mushy). Drain and set aside.
  • Step 2: Cook the Base
  • In a large skillet, heat olive oil over medium heat.
  • Sauté the diced onion for 3–4 minutes until translucent.
  • Add garlic, thyme, sage, salt, and pepper. Cook for another 1–2 minutes.
  • Step 3: Make the Sauce
  • In a separate saucepan, melt butter over medium heat.
  • Whisk in flour to form a roux, stirring constantly for 1 minute.
  • Gradually whisk in the milk until smooth. Cook for 3–5 minutes, stirring often, until thickened.
  • Add nutmeg, salt, and pepper. Adjust seasoning to taste.
  • Step 4: Assemble the Bake
  • In a large mixing bowl, combine cooked turkey, sweet potatoes, sautéed onion mix, peas, corn, and sauce. Mix gently.
  • Pour mixture into a greased 9x13-inch baking dish.
  • Optional: Sprinkle shredded cheese evenly over the top.
