Ingredients
  

  • 1 package about 12 sheets phyllo dough, thawed if frozen
  • 200 g feta cheese crumbled
  • 200 g plain Bulgarian yogurt
  • 3 large eggs
  • 1/2 cup unsalted butter melted
  • 1/4 cup vegetable oil
  • 1 cup sparkling water or club soda
  • Pinch of salt
  • Sesame seeds for sprinkling optional

Instructions
 

  • Prepare the Filling:
  • In a mixing bowl, combine crumbled feta, yogurt, and eggs. Mix well until the ingredients are thoroughly incorporated. Set aside.
  • Preheat the Oven:
  • Preheat your oven to 375°F (190°C). Grease a baking dish with butter or cooking spray.
  • Layer the Phyllo Dough:
  • Place one sheet of phyllo dough in the baking dish, allowing the excess to hang over the edges. Brush the sheet lightly with the melted butter and oil mixture. Repeat this process, layering each sheet and brushing with the butter-oil mixture.
  • Add the Filling:
  • Once you've layered about half of the phyllo sheets, spread the feta and yogurt filling evenly over the surface.
  • Continue Layering:
  • Continue layering the remaining sheets of phyllo on top of the filling, brushing each sheet with the butter-oil mixture. Tuck in any excess phyllo around the edges.
  • Score the Top Layer:
  • Using a sharp knife, gently score the top layer of phyllo into squares or diamonds. This will make it easier to cut after baking.
  • Pour the Sparkling Water:
  • Carefully pour the sparkling water or club soda evenly over the top of the Banitsa. This helps to achieve a crispy, golden crust.
  • Bake to Perfection:
  • Place the baking dish in the preheated oven and bake for 35-40 minutes or until the Banitsa is golden brown and crisp on top.
  • Optional Sesame Seed Topping:
  • If desired, sprinkle sesame seeds over the top of the Banitsa during the last 10 minutes of baking.
