Season the Chicken
In a bowl, combine chicken with olive oil, smoked paprika, garlic powder, onion powder, salt, and pepper. Toss to coat evenly.
Cook the Chicken
Grill Method: Preheat grill to medium-high heat. Grill chicken for 6–7 minutes per side until cooked through (internal temp 165°F).
Skillet Method: Heat a skillet over medium heat. Add a little oil, then cook chicken 5–7 minutes per side until browned and fully cooked.
Shred the Chicken
Let the cooked chicken rest for 5 minutes, then shred or dice it. Mix with the BBQ sauce until evenly coated.
Prepare Lettuce Wraps
Arrange lettuce leaves on a platter. Spoon 2–3 tablespoons of BBQ chicken into each leaf.
Add Toppings
Add shredded carrots, cabbage, red onion, avocado, and any other toppings you like. Sprinkle with fresh cilantro or green onions.
Serve Immediately
Serve wraps immediately while the chicken is warm and the lettuce is crisp.
