Breakfast Burrito

Ingredients
  

  • 4 large tortillas flour or whole wheat
  • 8 large eggs
  • 1 cup cooked black beans canned or homemade
  • 1 cup cooked and seasoned breakfast sausage or chorizo
  • 1 cup shredded cheese cheddar, Monterey Jack, or a blend
  • 1 cup diced tomatoes
  • 1/2 cup diced onions
  • 1/4 cup chopped fresh cilantro
  • 1 avocado sliced
  • Salsa sour cream, or hot sauce for serving
  • Salt and pepper to taste

Instructions
 

  • Prepare the Ingredients:
  • Cook the breakfast sausage or chorizo according to the package instructions.
  • Whisk the eggs in a bowl and season with salt and pepper.
  • Dice the tomatoes, onions, and cilantro. Slice the avocado.
  • Scramble the Eggs:
  • In a large skillet over medium heat, add a bit of oil or butter.
  • Pour in the whisked eggs and scramble them until just set. Remove from heat.
  • Assemble the Burritos:
  • Warm the tortillas in a dry skillet or microwave for a few seconds.
  • Lay out each tortilla and add a portion of scrambled eggs to the center.
