  • 1 cup dried cranberries or mixed dried fruit
  • 1/2 cup chopped nuts optional

  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 cup milk
  • 1 teaspoon vanilla extract

Instructions

  • Prepare the fruit mixture
  • In a bowl, combine 1 cup raisins, 1 cup dried cranberries (or mixed dried fruit), and 1/2 cup chopped nuts. Set aside.
  • Mix the wet ingredients
  • In a large bowl, beat together 1/2 cup melted butter, 1/2 cup brown sugar, and 2 large eggs until smooth. Stir in 1 teaspoon vanilla extract.
  • Combine dry ingredients
  • In a separate bowl, whisk together 1 cup flour, 1 teaspoon baking powder, 1 teaspoon cinnamon, and 1/2 teaspoon nutmeg.
  • Add everything together
  • Add the dry ingredients into the wet mixture. Pour in 1/2 cup milk and stir until combined. Fold in the fruit mixture.
  • Prepare the pudding bowl
  • Lightly grease a heat-safe bowl or pudding mold. Pour the batter in and cover tightly with foil.
  • Steam the pudding
  • Place the bowl in a large pot. Add hot water halfway up the sides of the pudding bowl. Cover the pot and steam over low heat for 2 hours, checking occasionally to keep the water level consistent.
  • Cool and serve
  • Let the pudding cool for 10–15 minutes before turning it out of the bowl. Serve warm with whipped cream, custard, or a dusting of powdered sugar.
