Prepare the Beans:
Rinse the black beans under cold water and remove any debris. Soak the beans in water overnight or for at least 8 hours.
Drain and rinse the soaked beans.
Cook the Stew:
In a large, heavy-bottomed pot or Dutch oven, combine the soaked black beans, sliced sausage, smoked pork ribs or bacon, salted pork, and pork shoulder or beef stew meat.
Add enough water to cover the ingredients by about 2 inches.
Add the chopped onion, minced garlic, bay leaves, ground cumin, and smoked paprika (if using).
Bring the mixture to a boil, then reduce the heat to low and simmer for about 2-3 hours, or until the beans and meats are tender. Stir occasionally and add more water if needed to keep the ingredients covered.
Season with salt and black pepper to taste during the last 30 minutes of cooking.
Serve Feijoada:
Remove the bay leaves from the stew.
Serve the Feijoada hot over cooked white rice.
Garnish with chopped fresh parsley.
Serve with orange slices on the side for a refreshing contrast to the rich stew.
