Instructions:
Prepare the Filling:
In a medium bowl, combine the finely chopped apples, granulated sugar, brown sugar, cinnamon, lemon juice, and cornstarch (if using). Toss everything together until the apples are well coated. Set aside.
Prepare the Pie Crust:
Roll out the pie crust sheets on a lightly floured surface. If you're using store-bought crust, you may need to roll it out slightly to make it thinner.
Cut the crust into rectangles, approximately 3x4 inches in size. You should get about 8 rectangles from each sheet, making 8 Pop-Tarts in total.
Assemble the Pop-Tarts:
Place half of the rectangles on a parchment-lined baking sheet.
Spoon a small amount of the apple filling (about 1-2 tablespoons) onto the center of each rectangle, leaving a border around the edges.
Brush the edges of each filled rectangle with the beaten egg to help seal the Pop-Tarts.
Place the remaining rectangles on top of the filling. Press down the edges with a fork to seal the Pop-Tarts and create a decorative edge.
Prick the top of each Pop-Tart with a fork to allow steam to escape during baking.
Bake the Pop-Tarts:
Preheat your oven to 375°F (190°C).
Brush the tops of the Pop-Tarts with the remaining beaten egg.
Bake in the preheated oven for 20-25 minutes, or until the Pop-Tarts are golden brown.
Remove from the oven and let them cool on a wire rack.
Prepare the Glaze:
In a small bowl, whisk together the powdered sugar, milk or cream, and vanilla extract until smooth. The glaze should be thick but pourable; add more milk if necessary.
Glaze the Pop-Tarts:
Once the Pop-Tarts are completely cool, drizzle the glaze over the tops. You can use a spoon to spread it evenly.
If desired, add sprinkles while the glaze is still wet.
Serve:
Allow the glaze to set before serving. Enjoy your homemade apple Pop-Tarts as a breakfast treat or dessert!
