Ingredients
  

  • 2 cups pitted Medjool dates
  • 1 cup boiling water
  • ¼ cup honey
  • 1 tsp cinnamon
  • ½ tsp salt
  • 1 cup chopped walnuts
  • 1 cup whole wheat flour or all‑purpose
  • ½ cup rolled oats
  • ½ cup butter melted
  • 1 tsp vanilla extract

Instructions
 

  • Preheat oven to 350°F and line an 8×8 baking dish with parchment.
  • Place dates in a bowl and pour boiling water over them. Let soften for 10 minutes.
  • Mash the dates with a fork until they form a thick paste.
  • Stir in honey, cinnamon, salt, and vanilla.
  • In a separate bowl, combine flour, oats, and melted butter until crumbly.
  • Press half the oat mixture into the bottom of the baking dish.
  • Spread the date‑honey mixture evenly over the crust.
  • Sprinkle walnuts on top.
  • Crumble the remaining oat mixture over everything.
  • Bake 25–30 minutes until golden and set.
  • Cool completely before slicing into bars.
