Mini Meatloaves

- 1 pound ground meat beef, turkey, or chicken
- 1 cup breadcrumbs
- 2 large eggs
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup ketchup or BBQ sauce for topping
Preheat your oven to 375°F (190°C). In a large bowl, combine the ground meat, breadcrumbs, eggs, salt, and black pepper until fully mixed.
Divide the mixture evenly among a 12-cup muffin tin, pressing it gently into each cup.
Spoon a thin layer of ketchup or BBQ sauce over the tops of each mini meatloaf.
Bake for 20–25 minutes, or until the meat is cooked through and the tops begin to caramelize.
Allow them to cool slightly before removing from the pan.
