MIXED SUMMER BERRY COBBLER

- 4 cups mixed berries blueberries, strawberries, blackberries, raspberries
- 1/2 cup granulated sugar
- 1 tbsp lemon juice
- 1 tsp vanilla extract
- 1 tbsp cornstarch
- Cobbler Topping
- 1 cup all‑purpose flour
- 1/2 cup granulated sugar
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 cup cold butter cubed
- 1/3 cup milk
- 1 tsp vanilla extract
- Optional
- 1 tbsp coarse sugar for sprinkling
- Vanilla ice cream for serving
Preheat oven to 375°F (190°C).
In a bowl, combine berries, sugar, lemon juice, vanilla, and cornstarch. Mix gently.
Pour berry mixture into a greased baking dish or cast‑iron skillet.
In another bowl, whisk flour, sugar, baking powder, and salt.
Cut in cold butter until mixture resembles coarse crumbs.
Add milk and vanilla; stir until a thick batter forms.
Drop spoonfuls of topping over the berries (rustic, uneven is perfect).
Sprinkle coarse sugar on top if desired.
Bake 35–40 minutes, until golden and bubbling.
Cool slightly and serve warm with vanilla ice cream.
