MIXED SUMMER BERRY COBBLER

Ingredients
  

  • 4 cups mixed berries blueberries, strawberries, blackberries, raspberries
  • 1/2 cup granulated sugar
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract
  • 1 tbsp cornstarch
  • Cobbler Topping
  • 1 cup all‑purpose flour
  • 1/2 cup granulated sugar
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup cold butter cubed
  • 1/3 cup milk
  • 1 tsp vanilla extract
  • Optional
  • 1 tbsp coarse sugar for sprinkling
  • Vanilla ice cream for serving

Instructions
 

  • Preheat oven to 375°F (190°C).
  • In a bowl, combine berries, sugar, lemon juice, vanilla, and cornstarch. Mix gently.
  • Pour berry mixture into a greased baking dish or cast‑iron skillet.
  • In another bowl, whisk flour, sugar, baking powder, and salt.
  • Cut in cold butter until mixture resembles coarse crumbs.
  • Add milk and vanilla; stir until a thick batter forms.
  • Drop spoonfuls of topping over the berries (rustic, uneven is perfect).
  • Sprinkle coarse sugar on top if desired.
  • Bake 35–40 minutes, until golden and bubbling.
  • Cool slightly and serve warm with vanilla ice cream.
