  • 1 pound ground pork sausage preferably with sage
  • 1/4 cup all-purpose flour
  • 3 cups whole milk
  • Salt and black pepper to taste

Instructions
 

  • Preparing the Biscuits:
  • Preheat your oven to 450°F (230°C).
  • In a large mixing bowl, whisk together the flour, baking powder, sugar, and salt until well combined.
  • Add the cold, cubed butter to the dry ingredients. Using a pastry cutter or your fingers, cut the butter into the flour until the mixture resembles coarse crumbs.
  • Pour in the cold buttermilk and stir until just combined. Be cautious not to overmix; the dough should be slightly sticky.
  • Turn the dough out onto a floured surface and gently knead it a few times. Pat or roll the dough to about 1/2-inch thickness.
  • Using a round biscuit cutter, cut out biscuits and place them on a baking sheet, ensuring they are close but not touching.
  • Bake for 10-12 minutes or until the biscuits are golden brown on top.
  • Cooking the Sausage Gravy:
  • In a large skillet over medium heat, cook the ground pork sausage. Break it apart with a spatula and cook until browned and cooked through.
  • Sprinkle flour over the cooked sausage and stir well, ensuring the flour is fully incorporated.
  • Gradually pour in the whole milk, stirring constantly to avoid lumps. Continue stirring until the mixture thickens, usually around 5-7 minutes.
  • Season the gravy with salt and black pepper to taste. Remember, the sausage adds some saltiness, so adjust accordingly.
  • Serving:
