  • 4 cloves garlic minced
  • 1 cup cherry tomatoes halved
  • 1 cup andouille sausage sliced
  • 1/2 cup green onions chopped
  • 1/4 cup fresh parsley chopped
  • 1 lemon sliced

Instructions
 

  • Prepare the Grits:
  • In a medium saucepan, bring water, and milk to a boil. Gradually whisk in the grits, reduce heat to low, and simmer, stirring frequently, until the grits are thick and creamy.
  • Season with salt and pepper, then stir in the cheddar cheese and butter until melted. Cover and set aside.
  • Season and Sauté the Shrimp:
  • In a bowl, toss the shrimp with Cajun seasoning, salt, and black pepper.
  • In a large skillet, heat olive oil over medium-high heat. Add minced garlic and sauté until fragrant.
  • Add seasoned shrimp to the skillet and cook until they turn pink, about 2-3 minutes per side. Remove shrimp and set aside.
  • Prepare the Sausage and Tomatoes:
  • In the same skillet, add sliced andouille sausage. Cook until browned and cooked through.
  • Add halved cherry tomatoes to the skillet and cook until they start to soften.
  • Combine and Serve:
  • Return the cooked shrimp to the skillet and stir to combine with the sausage and tomatoes.
  • Spoon a generous serving of cheesy grits onto each plate, then top with the shrimp, sausage, and tomato mixture.
  • Garnish with chopped green onions, fresh parsley, and lemon slices.
