  • 4 large bell peppers any color
  • - 1 cup cooked rice white or brown
  • - 1 pound ground beef or turkey
  • - 1 can 15 oz black beans, rinsed and drained (optional)
  • - 1 cup corn frozen or canned
  • - 1 cup salsa
  • - 1 teaspoon chili powder
  • - 1 teaspoon cumin
  • - Salt and pepper to taste
  • - 1 cup shredded cheese cheddar or Monterey Jack
  • - Fresh cilantro or parsley for garnish optional

Instructions
 

  • **Preheat the Oven**: Preheat your oven to 375°F (190°C).
  • **Prepare the Peppers**: Cut the tops off the bell peppers and remove the seeds and membranes. If needed, you can trim the bottoms slightly to help them stand upright.
  • **Cook the Meat**: In a skillet over medium heat, cook the ground beef until browned. Drain excess fat if necessary.
  • **Mix the Filling**: In a large bowl, combine the cooked ground beef, cooked rice, black beans, corn, salsa, chili powder, cumin, salt, and pepper. Mix until well combined.
  • **Stuff the Peppers**: Spoon the filling mixture into each bell pepper, pressing down gently to pack it in. Place the stuffed peppers upright in a baking dish.
  • **Add Cheese**: Sprinkle shredded cheese on top of each stuffed pepper.
  • **Bake**: Cover the dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, until the peppers are tender and the cheese is melted and bubbly.
