History of Amazing Turkey Enchiladas: Turkey enchiladas are one of those comforting, flavor-packed dishes that bridge cultures, bring families together, and celebrate the blending of traditional Mexican cuisine with modern American ingredients. While most people associate enchiladas with chicken, beef, or cheese, turkey enchiladas have carved out their own place in kitchens everywhere, especially as a creative and delicious way to use leftover turkey.

Ingredients
  

  • 8 flour tortillas
  • 2 cups cooked shredded turkey
  • 2 cups shredded cheese any preferred variety
  • 2 cups enchilada sauce

Instructions
 

  • Fill each tortilla with ¼ cup of shredded turkey and ¼ cup of shredded cheese, then roll them tightly.
  • Arrange the filled tortillas seam-side down in a baking dish.
  • Pour the 2 cups of enchilada sauce evenly over the top, making sure all tortillas are coated.
  • Sprinkle the remaining cheese over the dish.
  • Bake at 350°F for 20–25 minutes, or until the cheese is melted and the enchiladas are heated through.
