Equipment

  • 1 small mixing bowl
  • 1 sauce pan
  • 1 whisk
  • 4 glass ramekins or bowls

Ingredients
  

For the Vanilla Panna Cotta

  • 2 cups heavy cream
  • 1/2 cup milk
  • 1/2 cup sugar
  • 2 1/4 teaspoons unflavored gelatin 1 packet
  • 3 tablespoons cold water

For Berry Compote

  • 2 cups mixed berries
  • 1/4 cup sugar
  • 1 tablespoon lemon juice
  • 1 Zest of lemon
  • 1 teaspoon cornstarch optional for thickening

Instructions
 

Prepare the Vanilla Panna Cotta:

  • In a small bowl, sprinkle the gelatin over the cold water and let it sit for about 5 minutes to bloom.
  • In a saucepan, heat the heavy cream, whole milk, and granulated sugar over medium heat. Stir until the sugar is completely dissolved and the mixture is hot but not boiling.
  • Remove the cream mixture from heat and stir in the vanilla extract.
  • Add the bloomed gelatin to the cream mixture and whisk until the gelatin is completely dissolved. Make sure there are no lumps.
  • Pour the vanilla panna cotta mixture into serving glasses or ramekins. Allow them to cool at room temperature for about 20-30 minutes.
  • Once cooled, cover the glasses or ramekins with plastic wrap and refrigerate for at least 4 hours or until the panna cotta is set.

Prepare the Berry Compote:

  • In a saucepan, combine the mixed berries, granulated sugar, lemon juice, and lemon zest. If you want a thicker compote, you can add the optional cornstarch as well.
  • Cook the mixture over medium heat, stirring occasionally, until the berries soften and release their juices. This will take about 5-7 minutes.
  • Reduce the heat to low and simmer for an additional 5-7 minutes, or until the compote thickens slightly.
  • Remove the compote from heat and let it cool to room temperature.

Assemble and Serve:

  • Once the panna cotta is set and the berry compote is cooled, spoon the compote over the top of each panna cotta.
  • Garnish with fresh berries or mint leaves if desired.
