Vegetable and Cheese Bites

- 2 cups finely chopped mixed vegetables such as broccoli, carrots, and bell peppers
- 1 cup shredded cheese cheddar, mozzarella, or your preferred blend
- 4 large eggs
Preheat your oven to 350°F (175°C). Lightly grease a muffin tin.
In a large bowl, combine the chopped vegetables, shredded cheese, and eggs, mixing until everything is evenly coated and well combined.
Spoon the mixture into the muffin tin, filling each cup about three-quarters full
Bake for 18–22 minutes, or until the bites are set and lightly golden around the edges.
Let cool slightly before removing. Enjoy warm or at room temperature
