Ingredients
  

  • 4 cups watermelon cubed
  • 1 cup feta cheese crumbled
  • 1 cup cucumber sliced or diced (optional but popular)
  • ¼ cup fresh mint chopped
  • ¼ cup red onion thinly sliced (optional)
  • 2 tbsp olive oil
  • 1 –2 tbsp fresh lime juice or lemon juice
  • Pinch of salt
  • Pinch of black pepper
  • Optional: arugula basil, balsamic glaze

Instructions
 

  • Add watermelon cubes to a large bowl.
  • Add feta, cucumber, mint, and red onion.
  • Drizzle olive oil and lime juice over the salad.
  • Gently toss to combine without crushing the watermelon.
  • Season lightly with salt and pepper.
  • Chill 20–30 minutes before serving for best flavor.
  • Optional: top with arugula, basil, or a light drizzle of balsamic glaze.
