Watermelon Feta Salad

- 4 cups watermelon cubed
- 1 cup feta cheese crumbled
- 1 cup cucumber sliced or diced (optional but popular)
- ¼ cup fresh mint chopped
- ¼ cup red onion thinly sliced (optional)
- 2 tbsp olive oil
- 1 –2 tbsp fresh lime juice or lemon juice
- Pinch of salt
- Pinch of black pepper
- Optional: arugula basil, balsamic glaze
Add watermelon cubes to a large bowl.
Add feta, cucumber, mint, and red onion.
Drizzle olive oil and lime juice over the salad.
