Watermelon Overnight Oats
These Watermelon Overnight Oats are the perfect refreshing summer breakfast — hydrating, creamy, lightly sweet, and ready in minutes. Made with juicy watermelon, Greek yogurt, oats, and honey, this chilled breakfast is ideal for hot July mornings, meal prep, and healthy summer eating.
- 1 cup rolled oats
- 1 cup milk dairy or plant‑based
- ½ cup Greek yogurt
- 1 cup watermelon finely diced
- 1 –2 tbsp honey or maple syrup
- 1 tbsp chia seeds optional
- ½ tsp vanilla extract
- Pinch of salt
- Optional toppings: extra watermelon mint, shredded coconut, lime zest
Add oats, milk, yogurt, honey, chia seeds, vanilla, and salt to a jar or bowl.
Stir well to combine.
Fold in diced watermelon gently.
Cover and refrigerate overnight (or at least 4 hours).
