Zesty Za’atar‑Crusted Tilapia with Smoky Charred Leeks

Ingredients
  

  • 4 tilapia fillets 6 oz each, patted dry
  • 3 tbsp extra‑virgin olive oil divided
  • 4 tbsp za’atar spice blend
  • 1/2 tsp sea salt
  • 2 large leeks sliced into 1‑inch rounds
  • 1 tbsp unsalted butter
  • Juice of 1/2 lemon
  • 1/4 tsp red pepper flakes optional

Instructions
 

  • 1️⃣ Prep
  • Pat tilapia very dry. Wash leeks well to remove grit; drain and pat dry.
  • 2️⃣ Coat the Fish
  • Mix za’atar + salt on a plate. Brush one side of each fillet with olive oil. Press the oiled side into the za’atar to coat heavily.
  • 3️⃣ Char the Leeks
  • Heat 1 tbsp oil + butter in a skillet over medium‑high. Add leeks in a single layer. Cook 3–4 min without moving until deeply browned.
  • 4️⃣ Sear the Tilapia
  • Push leeks to the edges. Add remaining oil. Place tilapia crust‑side down. Sear 3 min until fragrant and crusted.
  • 5️⃣ Finish Cooking
  • Flip fillets. Cook 2–3 more min until opaque and flaky; leeks should be tender.
  • 6️⃣ Serve
  • Squeeze lemon over the pan to deglaze. Serve fish over charred leeks.
