Ingredients
  

  • 1 cup Arborio rice
  • - 2 cups diced butternut squash
  • - 4 cups vegetable broth
  • - 1/2 cup grated Parmesan cheese

Instructions
 

  • In a saucepan, heat the vegetable broth and keep it warm.
  • In another pot, sauté diced butternut squash until tender.
  • Add Arborio rice and stir for 1-2 minutes, then gradually add broth, one ladle at a time, stirring continuously until absorbed.
