Ingredients
  

  • 2 cups cooked turkey shredded or diced
  • 1 can 13.5 oz coconut milk
  • 1 tablespoon curry powder
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups cooked white rice for serving

Instructions
 

  • In a large skillet, combine the cooked turkey, coconut milk, curry powder, turmeric, cumin, paprika, salt, and black pepper.
  • Stir everything together and bring the mixture to a gentle simmer over medium heat.
  • Let the curry cook for about 10–12 minutes, stirring occasionally, until the flavors meld and the sauce thickens slightly. Serve the warm turkey curry spooned generously over the cooked white rice.
